To make the occasion even more special, we’re cooking one of our absolute favorite meals: kitcheri!

This simple, nourishing, and healing Ayurvedic dish has been a staple in our kitchen for years. It’s not just food; it’s comfort in a bowl, perfect for chilly February days.

If you’re unfamiliar with kitcheri, let me introduce you to this humble superstar. Made with mung beans, rice, and warming spices like turmeric and cumin, kitcheri is a traditional Indian dish that’s as soothing as it is wholesome. It's gentle on the digestive system, packed with nutrients, and naturally gluten-free and vegan (though you can adapt it to your liking!).

We use these kinds of lentils sometimes instead of the mung beans also add avocado on the side and my kids love adding Braggs Coconut Aminos on top.
